This recipe was actually created by accident, while I was attempting to make homemade pasta sauce. I just started putting a few things together I had in my pantry that seemed like the right ingredients for a pasta sauce, then once I tasted the final product it tasted just like my favorite tomato basil soup that I’ve been trying to recreate for years!
It took me a couple of tries to recreate it because of course the first time I made it I did not measure the ingredients.
The best part about this recipe is how simple is, it only requires 7 ingredients and only 4 steps! Even if you don’t have much experience cooking in the kitchen you can make this.
This recipe makes about 2 servings (about 24 oz) I actually quadruple this recipe when I make it because this freezes so well and taste even better after a day or two, and this also doubles as a pasta sauce!
Ingredients
- 1 can 28oz diced tomatoes
- 1/2 a medium yellow onion chopped
- 1 bouillon cube (I use a vegetable one)
- 1/2 tsp garlic powder
- 1 tbs olive oil
- 1.5 tbs maple syrup ( you can add more or less of this depending on your tastebuds)
- 1/3 cup of fresh basil leaves
Instructions
Heat up olive oil in a large pot, add bouillon cube and crumble with a spoon, and add the chopped onion and sauté (cover pot for a few minutes, this helps onion soften).
Once onion has soften add the can of diced tomato, garlic powder, maple syrup.
Bring to a boil, then turn heat down and simmer on medium heat for 20 minutes.
Remove from heat and stir in fresh basil
Blend half or more depending on if you want to leave some tomato chunks. I blended about 2/3 of it.
