Maya Kaimal Recently sent me their Goan Coconut simmer sauce and Tumeric + Cumin rice to try, and it was so delicious that I had to share this goodness with you all.
This recipe requires marinating 30 minutes ahead of time
This is a super quick recipe which only took about an hour to make. The longest part was chopping up all the veggies and just letting the tofu marinate before hand.
If you double this recipe (which is what I did) you can have enough left overs to eat for a couple of meals.
INGREDIENTS
- 1/2 block of super firm tofu*
- 1/2 teaspoon of garlic powder
- 2 tablespoon of soy sauce
- 1 tablespoon of olive oil
- 1/2 red pepper sliced
- 1 garlic minced
- 1/2 a yellow onion chopped
- 1 green onion chopped
- 1 Carrot sliced thin
- 1/2 a zucchini peeled and cubed into bite size pieces
- Cilantro to top
- 1 jar of Maya Kaimal Goan Coconut simmer sauce
- 1 Pack of Maya Kaimal Tumeric + Cumin rice
*For best flavor tofu should be marinated at least 30 minutes ahead of time or overnight.
INSTRUCTIONS
Tofu Marinate
- Cut tofu into small small bite size pieces, add enough soy sauce (about 2 tablespoon depending on the size of your container)to cover the bottom of a container and add all the tofu into the container.
- Add garlic powder and mix well.
- Let marinate for at least 30 minute or overnight. The tofu will soak up all the flavors, this is why you want SUPER firm tofu.
Vegetable Goan Coconut
- In a large pan heat up the olive oil sautée the garlic, yellow onion, and red pepper for about 3 minutes until it softens.
- Add marinated tofu cook until tofu flat on the pan flip tofu once it begins to brown.
- Add carrots and a splash of water and cover for a few minutes until carrots begin to soften.
- Reduce heat to low add Zucchini and Maya Kaimal Goan Coconut simmer sauce stir well to combine. Simmer for 20 minutes.
- Once completely cooked stir in green onion and cilantro.
- Once ready to eat place pack of Maya Kaimal Tumeric + Cumin rice in the microwave per instruction.
- Top with more cilantro and enjoy!
NOTES
The firmer the tofu the better, if the tofu is not firm you will end up with a mushy crumbling mess. I linked my favorite brand of tofu here.
If simmer sauce becomes too thick you can add water to it.
This taste amazing on its own without the rice or you can eat it with just naan bread.
This taste even better the next couple of days.
